Due to Ireland’s year-round lush green grass, Irish cheesemaking is prolific but relatively young to the world.
Chef Cynthia will be introducing you to some of Ireland’s lesser-known contributions to the cheese universe. You’ll be sampling Ardrahan, a luscious semi-soft cow’s milk with a salty nutty flavor, Coolea, caramelly tasting with a gouda like texture, Gubbeen, with its scent of mushrooms, nuts and earthiness, and a rich and buttery Cashel Blue.
To accompany these Irish cheeses will be some Irish inspired nibbles. Boxty, a traditional Irish potato pancake with some house smoked salmon, Carrot and Parsnip Spread, Irish Soda Rolls, Asparagus tart and of course, some of Chef’s Old School Jams.
To wash down the cheese and nibbles, you’ll have to have some “scoops” and the beverage theme will be Cocktails.
Chef will provide some ale, beer, whiskey + mixers and the recipes to whip up these libations. Why go to a bar when you can celebrate the Emerald Isle with a wonderful array of foods and drinks with convivial on-line company.
